  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 0.75 cups unsalted butter, cold and cubed
  • 4 large eggs
  • 0.75 cups lime juice, freshly squeezed
  • 1 tablespoon lime zest
  • 1 cups granulated sugar (for filling)
  • 0.25 cups all-purpose flour (for filling)
  • 2 tablespoons powdered sugar, for dusting

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper, leaving an overhang for easy removal later.

Step 2

In a large mixing bowl, combine 1.5 cups of all-purpose flour and 0.5 cups of granulated sugar. Using a pastry cutter or your fingers, cut in the 0.75 cups of cold, cubed unsalted butter until the mixture resembles coarse crumbs.

Step 3

Press the crumb mixture evenly into the prepared baking dish to form the crust. Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden.

Step 4

While the crust is baking, prepare the lime filling. In a medium bowl, whisk together the 4 large eggs, 0.75 cups of freshly squeezed lime juice, 1 tablespoon of lime zest, 1 cup of granulated sugar, and 0.25 cups of all-purpose flour until smooth and well combined.

Pour the lime filling over the hot crust once it comes out of the oven. Spread it evenly to all corners of the baking dish.

Return the baking dish to the oven and bake for an additional 18-20 minutes, or until the filling is set and no longer jiggles in the center.

Remove from the oven and let the lime bars cool completely at room temperature. Once cooled, refrigerate for at least 1 hour to chill.

Using the parchment paper overhang, lift the lime bars from the pan onto a cutting board. Slice into 12 bars.

Step 9

Before serving, dust the top with 2 tablespoons of powdered sugar for a finishing touch. Enjoy!
