Ingredients

  • 1 cup heavy whipping cream
  • 2 tablespoons granulated sugar
  • 3 units large eggs, separated
  • 0.25 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon powdered sugar (optional, for garnish)
  • 1 serving fresh mint leaves or lemon slices (optional, for garnish)

Directions

Step 1

In a chilled mixing bowl, whip the heavy whipping cream with 1 tablespoon of granulated sugar until soft peaks form. Cover and refrigerate.

Step 2

In a separate, clean bowl, beat the egg whites on medium speed until frothy. Slowly add the remaining tablespoon of granulated sugar while continuing to beat until stiff peaks form. Set aside.

Step 3

In another bowl, whisk the egg yolks, lemon juice, and lemon zest until well combined.

Step 4

Place the egg yolk mixture over a double boiler (or a heatproof bowl set over a pot of simmering water). Stir continuously for about 3-5 minutes until the mixture thickens slightly and coats the back of a spoon. Remove from heat and let it cool completely.

Step 5

Once the egg yolk mixture has cooled, gently fold in the whipped cream a little at a time until combined and smooth.

Step 6

Carefully fold the whipped egg whites into the lemon mixture in three parts. Use a spatula to gently fold without deflating the mousse, ensuring everything is well incorporated.

Step 7

Divide the mousse evenly into serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Step 8

Before serving, optionally dust the tops with powdered sugar and garnish with fresh mint leaves or lemon slices. Serve chilled and enjoy!
