Ingredients

  • 240 ml Espresso or strong coffee, cooled
  • 40 g Granulated sugar
  • 225 g Mascarpone cheese
  • 225 g Nonfat plain Greek yogurt
  • 2 tsp Vanilla extract
  • 15 g Cocoa powder, unsweetened
  • 200 g Ladyfingers
  • 20 g Dark chocolate (optional, for topping)

Directions

Step 1

Prepare 240ml of strong espresso or coffee and set it aside to cool completely.

Step 2

In a medium bowl, whisk together the mascarpone cheese, Greek yogurt, granulated sugar, and vanilla extract until smooth and creamy.

Step 3

Pour the cooled coffee into a shallow dish. Quickly dip each ladyfinger into the coffee, ensuring that they absorb liquid but do not become soggy. Lay the coffee-soaked ladyfingers in a single layer in the bottom of an 8x8-inch dish.

Step 4

Spread half of the mascarpone-yogurt mixture over the ladyfingers, using a spatula to smooth it evenly.

Step 5

Dust the layer with half of the cocoa powder using a fine sieve.

Step 6

Add another layer of coffee-soaked ladyfingers on top of the first layer and spread the remaining mascarpone-yogurt mixture over the second layer.

Step 7
