Ingredients

  • 1.5 cups orzo pasta
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.5 cup kalamata olives
  • 0.25 cup red onion
  • 0.5 cup crumbled feta cheese
  • 0.25 cup extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1.5 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Bring a medium pot of salted water to a boil.

Step 2

Add the orzo pasta and cook for 8–10 minutes, or until al dente. Drain and rinse under cold water to cool, then transfer to a large mixing bowl.

Step 3

While the orzo is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, slice the kalamata olives, and finely chop the red onion.

Add the cherry tomatoes, cucumber, olives, red onion, and crumbled feta cheese to the bowl with the cooled orzo.
