Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup granulated sugar
  • 0.25 cup light brown sugar (packed)
  • 0.5 cup unsweetened applesauce
  • 0.25 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (or low-fat milk with a splash of vinegar)
  • 0.5 cup boiling water
  • 0.75 cup shredded sweetened coconut
  • 0.5 cup chopped pecans
  • 0.5 cup light coconut milk
  • 0.25 cup maple syrup (or honey)
  • 1 tablespoon cornstarch
  • 0.5 teaspoon vanilla extract (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

Step 3

In another bowl, combine the granulated sugar, light brown sugar, applesauce, vegetable oil, eggs, and vanilla extract. Beat until smooth and thoroughly mixed.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.

Step 5

Slowly pour in the buttermilk and mix until the batter is smooth. Then, carefully stir in the boiling water. The batter will be thin, but this is normal.

Step 6

Pour the batter into the prepared cake pan and bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

While the cake is baking, prepare the topping. In a saucepan over medium heat, combine the light coconut milk, maple syrup, and cornstarch. Whisk continuously until the mixture thickens, about 3-4 minutes.

Step 8

Remove the saucepan from heat and stir in the shredded coconut, chopped pecans, and vanilla extract. Let the topping cool slightly.

Step 9

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once the cake is cool, spread the coconut-pecan topping evenly over the surface of the cake.

Step 11

Slice into 12 servings and enjoy your Light German Chocolate Cake!
