Ingredients

  • 300 grams Sweetened shredded coconut
  • 4 large Egg whites
  • 100 grams Granulated sugar
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Almond extract (optional)
  • 100 grams Dark chocolate (optional, for dipping)

Directions

Step 1

Preheat your oven to 165°C (325°F) and line two baking sheets with parchment paper.

Step 2

In a medium mixing bowl, whisk the egg whites, granulated sugar, vanilla extract, almond extract (if using), and salt until frothy and well combined.

Step 3

Add the sweetened shredded coconut to the egg white mixture and gently fold until the coconut is evenly coated with the wet ingredients.

Step 4

Using a small cookie scoop or a tablespoon, scoop the coconut mixture into small mounds (about 1.5 inches in diameter) and place them onto the prepared baking sheets, leaving about 1 inch of space between each mound.
