Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 0.5 cup dry Marsala wine
  • 0.5 cup low-sodium chicken broth
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

Place the chicken breasts on a cutting board and slice them horizontally to create 4 thin cutlets. Season both sides with salt and pepper.

Step 2

Place the flour on a shallow plate and lightly dredge the chicken cutlets in the flour, shaking off any excess.

Step 3

Heat olive oil and butter in a large skillet over medium heat until hot. Add the chicken cutlets and cook for 3-4 minutes per side until golden brown and fully cooked. Transfer the chicken to a plate and set aside.
