Ingredients

  • 0.5 cups Popcorn kernels
  • 2 tablespoons Vegetable oil
  • 0.5 cups Light brown sugar
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Honey
  • 1 teaspoons Vanilla extract
  • 0.25 teaspoons Salt

Directions

Step 1

Heat a large pot over medium heat and add 2 tablespoons of vegetable oil.

Step 2

Add 1/2 cup of popcorn kernels in an even layer. Cover the pot with a tight-fitting lid, leaving a small vent for steam to escape.

Step 3

Shake the pot occasionally as the kernels begin to pop, and continue until the popping slows down (approximately 3-4 seconds between pops). Remove from heat, pour the popcorn into a large mixing bowl, and discard any unpopped kernels.

Step 4

Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

Step 5

In a small saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add 1/2 cup of light brown sugar and 2 tablespoons of honey, stirring constantly until the mixture starts to bubble gently.

Step 6

Let the mixture boil softly for 2 minutes, stirring frequently, then remove it from the heat.

Step 7

Quickly stir in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt.

Step 8

Pour the caramel mixture evenly over the popcorn in the mixing bowl. Use a silicone spatula to gently toss and coat the popcorn.

Step 9

Spread the caramel-coated popcorn evenly onto the prepared baking sheet.

Step 10

Bake the popcorn in the preheated oven for 10 minutes, stirring halfway through to ensure even coating and crispness.

Step 11

Remove from the oven and let the popcorn cool completely on the baking sheet. The caramel will harden as it cools.

Step 12

Once cooled, break apart any clumps and serve. Store leftovers in an airtight container for up to 5 days.
