Ingredients

  • 1 cup Brown sugar
  • 3 tablespoons Unsalted butter
  • 2 cups Heavy cream
  • 1 teaspoon Gelatin powder
  • 2 tablespoons Cold water
  • 1 cup Canned pineapple chunks (drained, juice reserved)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Whipped cream (for garnish)
  • 4 slices Fresh pineapple slices (optional, for garnish)
  • 4 leaves Mint leaves (optional, for garnish)

Directions

Step 1

In a small saucepan, heat the brown sugar and butter over medium heat, stirring until melted and combined to create a butterscotch sauce. Remove from heat and let cool slightly.

Step 2

In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for 5 minutes.

Step 3

Reheat the butterscotch sauce gently and stir in 1/2 cup of heavy cream until smooth. Add the bloomed gelatin and stir until dissolved. Remove from heat and allow to cool to room temperature.

Step 4

In a blender or food processor, puree the canned pineapple chunks until smooth.

Step 5

Fold the pineapple puree into the butterscotch mixture, along with the vanilla extract. Mix gently until well combined.

Step 6

Using a stand mixer or a handheld electric whisk, whip the remaining heavy cream (1 1/2 cups) until soft peaks form.

Step 7

Gently fold the whipped cream into the pineapple-butterscotch mixture in three additions, being careful to maintain the airy texture.

Step 8

Spoon the mousse into individual serving glasses or bowls. Cover and refrigerate for at least 4 hours, or until set.

Step 9

Before serving, garnish each mousse with a dollop of whipped cream, a fresh pineapple slice, and a mint leaf, if desired.
