  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 cup rolled oats
  • 1 quarter cup almond flour
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a small bowl, mix the rolled oats, almond flour, cinnamon, and 1 tablespoon of sugar.

Rinse the blueberries and pat dry. In a medium bowl, combine the blueberries with lemon juice and the remaining 1 tablespoon of sugar. Mix gently and set aside to macerate for 5 minutes.

Step 6

In another bowl, whisk the Greek yogurt, honey, and vanilla extract until smooth.

Step 7

Assemble the dessert by dividing the yogurt mixture evenly among four small dessert glasses or bowls.
