Ingredients

  • 300 grams Mixed berries (strawberries, raspberries, blueberries, or blackberries)
  • 50 grams Granulated sugar
  • 1 tablespoon Gelatin powder
  • 3 tablespoons Water
  • 250 ml Heavy whipping cream
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar
  • 50 grams Fresh berries (for garnish)
  • 4 leaves Mint leaves (for garnish)

Directions

Step 1

Wash the mixed berries thoroughly and pat them dry with a paper towel.

Step 2

Add the berries and granulated sugar to a blender or food processor. Blend until smooth to create a berry puree. Strain the mixture through a fine mesh sieve to remove seeds, if desired.

Step 3

In a small bowl, combine the gelatin powder with 3 tablespoons of water. Let it sit for 5 minutes to bloom.

Step 4

Heat the bloomed gelatin in the microwave for 10-15 seconds or until fully dissolved. Allow it to cool slightly but remain liquid.

Stir the dissolved gelatin into the berry puree until fully incorporated. Set the mixture aside.
