  • 250 milliliters low-sodium beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 120 milliliters skim milk
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large skillet or pot over medium heat.

Add the diced onion, carrot, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until softened.
