Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons Olive oil
  • 8 ounces Penne pasta
  • 1 piece Red bell pepper, sliced
  • 1 piece Yellow bell pepper, sliced
  • 1 piece Zucchini, sliced into half moons
  • 3 cloves Garlic, minced
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese, shredded
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook the penne pasta in a large pot of salted boiling water according to the package instructions. Drain and set aside.

Step 2

Slice the chicken breasts into thin strips and coat them evenly with 1 tablespoon of Cajun seasoning.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken strips and cook for 5-7 minutes until browned and fully cooked. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the sliced red and yellow bell peppers, zucchini, and garlic. Sauté for 4-5 minutes until the vegetables are tender but still crisp.
