Ingredients

  • 12 oz Linguine pasta
  • 1 lb Large shrimp, peeled and deveined
  • 3 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 0.5 tsp Red pepper flakes
  • 2 tbsp Lemon juice, freshly squeezed
  • 2 tbsp Fresh parsley, chopped
  • 0.25 cup Parmesan cheese, grated (optional)
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 0.5 cup Pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the pasta is cooking, pat the shrimp dry with paper towels and season lightly with salt and black pepper.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, stirring frequently, until the garlic is fragrant (about 1 minute).

Step 4

Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, flip, and cook for another 2-3 minutes, or until the shrimp is pink and opaque. Remove the shrimp from the skillet and set aside.

Step 5

Lower the heat slightly and add the reserved pasta water to the skillet. Use a wooden spoon to scrape up any browned bits from the bottom of the pan.

Step 6

Add the cooked linguine to the skillet and toss to coat in the sauce.

Return the shrimp to the skillet and stir in the lemon juice and chopped parsley. Toss until everything is evenly combined and heated through.
