Ingredients

  • 240 grams All-purpose flour
  • 240 grams Sourdough starter (active or discard)
  • 240 ml Milk
  • 2 large Eggs
  • 60 grams Unsalted butter (melted and cooled)
  • 30 grams Granulated sugar
  • 8 grams Baking powder
  • 3 grams Baking soda
  • 3 grams Salt
  • 5 ml Vanilla extract

Directions

Step 1

In a large mixing bowl, whisk together the sourdough starter, flour, milk, and sugar. Cover with a clean kitchen towel and let it rest at room temperature for 30 minutes to allow the mixture to ferment slightly.

Step 2

In a separate small bowl, whisk eggs until slightly frothy. Then, whisk in the melted butter and vanilla extract.

Step 3

Add the egg and butter mixture to the sourdough starter mixture and stir until well combined.

Step 4

Sift in the baking powder, baking soda, and salt. Gently mix the dry ingredients into the batter until just combined. Avoid overmixing to keep the batter light.

Step 5

Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease the surface with non-stick spray or a small amount of melted butter.

Step 6

Pour an appropriate amount of batter onto the preheated waffle iron (depending on its size) and close the lid. Cook until the waffles are golden brown and crisp, about 4–5 minutes or as directed by your waffle maker.

Step 7

Carefully remove the waffles and transfer to a wire rack to keep them crisp while you cook the remaining batter.

Step 8

Serve the waffles warm with your favorite toppings, such as fresh fruit, whipped cream, maple syrup, or a sprinkle of powdered sugar.
