Ingredients

  • 3 cups Unsweetened almond milk (or any low-fat milk)
  • 4 large Egg yolks
  • 1/3 cup Sugar-free sweetener (e.g., Stevia, monk fruit)
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground nutmeg
  • 1/2 teaspoon Ground cinnamon
  • 1/8 teaspoon Salt
  • 1 dollop Low-fat whipped topping (optional, for garnish)
  • 1 pinch Ground cinnamon or nutmeg (optional, for garnish)

Directions

Step 1

In a medium-sized mixing bowl, whisk the egg yolks until smooth and creamy.

Step 2

Gradually whisk in the sugar-free sweetener until the mixture thickens slightly and lightens in color.

Step 3

In a medium saucepan, combine the almond milk, vanilla extract, ground nutmeg, ground cinnamon, and salt. Heat the mixture over medium heat until small bubbles form around the edges of the pan, but do not let it boil.

Step 4

Slowly temper the egg mixture by adding a ladleful of the hot milk mixture to the egg yolks, whisking constantly to prevent curdling.

Step 5

Gradually pour the tempered egg mixture back into the saucepan while whisking continuously.

Reduce the heat to low and continue stirring the mixture for 4-6 minutes, or until it thickens slightly and coats the back of a spoon. Do not let the mixture boil.

Remove the pot from heat and allow the eggnog to cool to room temperature. Then, cover and refrigerate for at least 2 hours or until well chilled.
