Ingredients

  • 1 lb Fresh calamari (cleaned, tubes and tentacles)
  • 1 whole Lemon
  • 3 whole Garlic cloves (thinly sliced)
  • 2 tbsp Olive oil
  • 2 tbsp Fresh parsley (chopped)
  • 0.25 cup White wine
  • 1 tsp Salt
  • 0.5 tsp Black pepper (freshly ground)
  • 0.25 tsp Red pepper flakes (optional)
  • 1 whole Bay leaf

Directions

Step 1

Rinse the cleaned calamari tubes and tentacles under cold water and pat them dry with paper towels. Cut the tubes into 1/2-inch rings, and leave the tentacles whole.

Step 2

Slice the lemon in half. Juice one half and set aside the juice. Slice the other half into thin rounds.

Step 3

Heat the olive oil over medium heat in a large, deep skillet or pot with a tight-fitting lid. Add the garlic slices and sauté for 1-2 minutes until they become fragrant, being careful not to let them brown.

Step 4

Stir in the white wine, lemon juice, bay leaf, and a pinch of red pepper flakes (if using). Bring the mixture to a simmer.

Step 5

Place the calamari pieces into the skillet, spreading them out evenly. Sprinkle with salt and black pepper, and lay the lemon slices on top.
