Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons brown sugar
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 0.5 cup chicken broth
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon unsalted butter

Directions

Step 1

Pat the pork chops dry with paper towels. Season both sides with salt, black pepper, smoked paprika, and garlic powder.

Step 2

Heat a large skillet over medium heat. Add olive oil and swirl to coat the bottom of the pan.

Step 3

Sear the pork chops in the skillet for 3-4 minutes on each side, or until nicely browned. Remove the chops from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to low and add brown sugar, honey, Dijon mustard, apple cider vinegar, soy sauce, chicken broth, and fresh thyme leaves. Stir to combine and bring to a simmer.

Step 5

Allow the sauce to cook for 3-4 minutes, stirring occasionally, until it slightly thickens.

Step 6

Return the pork chops to the skillet, spooning the sauce over the top. Cover the skillet with a lid and cook for an additional 6-8 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 7

Remove the pork chops from the skillet and let them rest for a few minutes on a plate.

Step 8

Stir the butter into the sauce left in the skillet until it melts, creating a glossy finish.

Step 9

Serve the pork chops hot, generously drizzled with the pan sauce. Optionally, garnish with additional fresh thyme.
