Ingredients

  • 500 grams carrots
  • 2 medium tomatoes
  • 3 cloves garlic cloves

  • 0.5 teaspoons black pepper
  • 0.25 teaspoons cayenne pepper (optional)
  • 125 milliliters water
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the carrots and slice them into thin rounds about 0.5 cm thick. Set aside.

Step 2

Grate the tomatoes using a box grater, discarding the skin. Alternatively, you can blend the tomatoes until smooth. Set the tomato puree aside.

Step 3

Finely chop the garlic cloves.

Step 4

Heat the olive oil in a large skillet or saucepan over medium heat.

Add the chopped garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
