Ingredients

  • 170 grams Unsalted butter
  • 200 grams Granulated sugar
  • 100 grams Brown sugar (lightly packed)
  • 3 pieces Large eggs
  • 2 teaspoons Vanilla extract
  • 125 grams All-purpose flour
  • 40 grams Unsweetened cocoa powder
  • 0.5 teaspoons Salt
  • 150 grams White chocolate chips
  • 100 grams Macadamia nuts (roughly chopped)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 20cm (8-inch) square baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a medium saucepan over low heat, melt the unsalted butter, stirring occasionally until fully melted. Remove from heat and allow to cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar, brown sugar, and melted butter until smooth and combined.

Step 4

Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract until fully incorporated.

Step 5

In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt. Gradually fold this dry mixture into the wet ingredients until just combined; do not overmix.

Step 6

Gently fold in the white chocolate chips and chopped macadamia nuts, ensuring they are evenly distributed throughout the batter.

Step 7

Pour the brownie batter into the prepared baking pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs (do not overbake).

Step 9

Remove the pan from the oven and place it on a wire rack to cool completely. Once cooled, use the parchment paper overhang to lift the brownies out of the pan.

Step 10

Slice into 16 squares and serve. Store any leftovers in an airtight container at room temperature for up to 3 days.
