Ingredients

  • 2 cups All-purpose flour
  • 1 packet Active dry yeast
  • 2 tablespoons Granulated sugar
  • 1.5 cups Warm milk
  • 2 tablespoons Unsalted butter, melted
  • 1 large Egg
  • 0.5 teaspoons Salt
  • 1 teaspoon Vanilla extract
  • 1 as needed Vegetable oil or butter (for cooking)

Directions

Step 1

In a large mixing bowl, combine the warm milk and granulated sugar. Sprinkle the active dry yeast over the top and let sit for 5-10 minutes until the mixture becomes frothy.

Step 2

Add the melted butter, egg, salt, and vanilla extract to the yeast mixture. Whisk until well combined.

Step 3

Gradually add the all-purpose flour, stirring constantly, until you have a smooth and slightly thick batter.

Step 4

Cover the bowl with plastic wrap or a clean kitchen towel and let the batter rise at room temperature for 1-2 hours, or until it doubles in volume. Alternatively, refrigerate the batter overnight for a deeper, tangier flavor.

Step 5

When ready to cook, gently stir the batter to deflate it. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil or butter.

Step 6

Scoop 1/4 cup of the batter for each pancake onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.

Step 7

Flip the pancakes and cook for another 1-2 minutes, or until the other side is golden brown. Adjust the heat as needed to prevent burning.

Step 8

Repeat with the remaining batter, greasing the skillet lightly between batches if necessary.

Step 9

Serve the pancakes warm with your choice of toppings, such as syrup, fresh fruit, whipped cream, or powdered sugar.
