Ingredients

  • 1.75 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup Libby's 100% pure pumpkin puree
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.25 cup milk
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped nuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with paper liners or lightly grease it.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt until well combined.

Step 3

In a separate bowl, whisk together the pumpkin puree, eggs, vegetable oil, milk, and vanilla extract until smooth.

Step 4

Gradually fold the wet ingredients into the dry ingredients using a spatula or spoon. Mix until just combined—do not overmix. If using nuts or chocolate chips, gently fold them in now.

Step 5

Evenly scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

Step 6

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days.
