Ingredients

  • 0.25 cup (chopped) cilantro
  • 2 medium (juiced) lime
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp (or to taste) salt
  • 0.25 tsp (or to taste) black pepper

Directions

Step 1

Drain and rinse the black beans thoroughly. Place them in a large mixing bowl.

Step 2

Add the sweet corn to the bowl. If using frozen corn, allow it to thaw first.

Step 3

Dice the roma tomatoes, red bell pepper, and red onion. Add them to the bowl.

Step 4

Finely mince the jalapeño and add it to the mixture. Be sure to remove the seeds if you prefer less heat.
