Ingredients

  • 3 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Milk
  • 1.5 cups Raisins
  • 0.5 cup Brown sugar
  • 1 tablespoon Cornstarch
  • 0.75 cup Water

Directions

Step 1

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 2

In a large bowl, cream together the butter and granulated sugar using a hand mixer or stand mixer until light and fluffy (about 2-3 minutes).

Step 3

Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.

Step 4

Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until a soft dough forms.

Step 5

Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour.

Step 6

To make the raisin filling, combine the raisins, brown sugar, cornstarch, and water in a small saucepan. Cook over medium heat, stirring frequently, until the mixture thickens and the raisins soften (about 5-7 minutes). Let the filling cool completely.

Step 7

Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

Step 8

On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cookie cutter (about 2.5 inches in diameter) to cut out circles.

Step 9

Place half of the circles onto the prepared baking sheets. Spoon 1 teaspoon of the raisin filling into the center of each circle.

Step 10

Top each with a second circle of dough, and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

Step 11

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and transfer to a wire rack to cool completely.

Step 12

Serve and enjoy your homemade raisin filled cookies!
