Ingredients

  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 1 teaspoon Caraway seeds
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel the potatoes and dice them into ½-inch cubes. Place the diced potatoes in a bowl of cold water to prevent them from browning while you prepare the other ingredients.

Step 2

Peel and finely chop the yellow onion. Set aside.

Step 3

Drain the potatoes and pat them dry with a clean kitchen towel or paper towels. Make sure they are as dry as possible to help them crisp up during cooking.

Step 4

Heat a large cast-iron skillet or heavy-bottomed frying pan over medium heat. Add the olive oil and butter, allowing the butter to melt completely.

Step 5

Add the diced potatoes to the skillet in a single layer, spreading them out as evenly as possible. Let them cook undisturbed for about 5 minutes, to allow a golden crust to form on the bottom.

Step 6

Sprinkle the chopped onion and caraway seeds over the potatoes, then stir gently to combine. Spread the mixture out again into a single layer.

Step 7

Season the potatoes with salt and black pepper. Cook for another 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender, and the onions are caramelized.

Step 8

Remove the skillet from the heat. Sprinkle the fried potatoes with freshly chopped parsley for a burst of freshness.

Step 9

Serve hot as a side dish or alongside your favorite main course. Enjoy!
