Ingredients

  • 2.5 cups Cake flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter (softened)
  • 1.75 cups Granulated sugar
  • 4 Large egg whites (room temperature)
  • 2 teaspoons Pure vanilla extract
  • 0.5 teaspoons Almond extract
  • 1 cup Buttermilk (room temperature)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans or line them with parchment paper for easy removal.

Step 2

In a medium bowl, sift together the cake flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter on medium speed using a hand or stand mixer until smooth and creamy, about 1 minute.

Step 4

Gradually add the granulated sugar to the butter, beating on medium-high speed until light and fluffy, about 3-4 minutes. Scrape down the sides of the bowl as needed.

Step 5

Reduce the mixer speed to medium. Add the egg whites one at a time, beating well after each addition. Then mix in the vanilla extract and almond extract.

Step 6

With the mixer on low speed, alternate adding the dry ingredients and the buttermilk, beginning and ending with the dry ingredients (add the flour mixture in three parts and the buttermilk in two parts). Mix until just incorporated, being careful not to overmix.

Step 7

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 8

Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 9

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, carefully invert them onto a wire rack to cool completely.

Step 10

Frost and decorate the cake as desired once it has completely cooled. Popular options include vanilla buttercream or whipped cream frosting.
