Ingredients

  • 2 cups graham cracker crumbs
  • 0.75 cups unsalted butter, melted
  • 0.25 cups granulated sugar
  • 16 ounces cream cheese, softened
  • 0.5 cups sour cream
  • 0.75 cups granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon (for topping)
  • 2 tablespoons granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (163°C). Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until well combined.

Step 3

Press the crumb mixture evenly into the bottom of the prepared baking dish to form the crust. Set aside.

Step 4

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Step 5

Add the sour cream, 3/4 cup granulated sugar, flour, 1 teaspoon cinnamon, and vanilla extract to the cream cheese. Beat until fully combined and smooth.

Step 6

Add the eggs, one at a time, mixing just until incorporated after each addition. Do not overmix.

Step 7

Pour the cheesecake batter over the prepared crust and spread it evenly with a spatula.

Step 8

In a small bowl, mix together 1 teaspoon ground cinnamon and 2 tablespoons granulated sugar. Sprinkle this cinnamon-sugar mixture evenly over the top of the cheesecake batter.

Step 9

Bake in the preheated oven for 35-40 minutes, or until the cheesecake is set and the edges are lightly golden. The center may still jiggle slightly.

Step 10

Remove from the oven and allow the bars to cool to room temperature in the pan.

Step 11

Transfer the baking dish to the refrigerator and chill for at least 3 hours, or overnight, before slicing into bars.

Step 12

Use the parchment paper overhang to lift the bars out of the baking dish. Slice into even rectangles, serve, and enjoy!
