Ingredients

  • 1 cup Wild rice
  • 2 cups Vegetable broth
  • 2 cups Broccoli florets
  • 1 cup Button mushrooms (or cremini mushrooms)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Fresh thyme
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Bread cubes (day-old, whole-grain or sourdough bread)
  • 1 tablespoon Non-dairy butter (optional for richness)

Directions

Step 1

Rinse the wild rice under cold water. In a medium saucepan, combine the wild rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 30-35 minutes or until the rice is tender and the liquid is absorbed. Set aside.

Step 2

While the rice cooks, steam the broccoli florets until bright green and tender, about 5 minutes. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced yellow onion and sauté for 3-4 minutes until translucent. Add the mushrooms and cook until softened, about 5 minutes.

Stir in the minced garlic, fresh thyme, and salt and pepper. Cook for an additional minute until fragrant.

In a large mixing bowl, combine the cooked wild rice, steamed broccoli, sautéed mushrooms and onions, chopped parsley, and bread cubes. If using, melt the non-dairy butter and drizzle it over the mixture for added richness.

Preheat your oven to 350°F (175°C). Lightly grease a baking dish with olive oil or non-dairy butter.

Transfer the stuffing mixture into the prepared baking dish, pressing it down gently. Cover with foil and bake for 20 minutes. Then, remove the foil and bake for another 10 minutes, allowing the top to crisp up slightly.
