Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Thaw the puff pastry sheets according to the package instructions, keeping them cool but pliable.
In a medium bowl, whisk together the eggs, milk, salt, and black pepper.
Heat a nonstick skillet over medium heat and add the butter. Once melted, pour in the egg mixture. Gently scramble the eggs until just set but soft. Remove from heat and set aside to cool slightly.
