Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes (canned or fresh)
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 0.5 teaspoons dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 15 leaves fresh basil leaves, finely chopped
  • 0.25 cups parmesan cheese (optional), grated

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Step 2

Add the finely diced onion to the pan and sauté until it becomes translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for 1 minute, being careful not to let it burn.

Step 4

Add the crushed tomatoes and tomato paste to the pan. Stir to combine.

Step 5

Sprinkle in the sugar, dried oregano, dried thyme, salt, and black pepper. Stir well to evenly distribute the seasonings.

Step 6

Reduce the heat to low and let the sauce simmer uncovered for 20-25 minutes, stirring occasionally to prevent sticking.

Step 7

Once the sauce has thickened slightly and the flavors have melded, stir in the fresh chopped basil.

Step 8

Taste the sauce and adjust seasoning as needed. For added richness, stir in the grated parmesan cheese if desired.

Step 9

Remove the pan from heat. Serve immediately over your favorite pasta or as a base for other dishes, or let cool and store in an airtight container in the refrigerator for up to 5 days.
