Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 small head green cabbage, chopped
  • 2 medium potatoes, peeled and diced
  • 14 ounces canned diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 leaf bay leaf
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, sliced carrots, and chopped celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Add the chopped cabbage, diced potatoes, canned diced tomatoes (including the liquid), and vegetable broth to the pot. Stir to combine.

Step 5

Sprinkle in the thyme, paprika, salt, and black pepper. Add the bay leaf to the pot.

Step 6

Bring the soup to a boil over high heat, then reduce the heat to low. Cover the pot and let the soup simmer for 30 minutes, or until the cabbage and potatoes are tender.

Step 7

Remove the bay leaf and discard it. Taste the soup and adjust the seasoning with additional salt or pepper, if needed.

Step 8

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot and enjoy!
