Ingredients

  • 1 cup Green or brown lentils
  • 2 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 3 cloves Garlic cloves
  • 2 medium Tomatoes
  • 3 cups Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the lentils under cold water and set aside.

Step 2

Dice the onion, mince the garlic, and chop the zucchini and tomatoes into small cubes.

Step 3

In a large pot, heat the olive oil over medium heat.

Step 4

Add the diced onion to the pot and sauté for 3-4 minutes until softened.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the chopped zucchini to the pot and sauté for 5 minutes, stirring occasionally.

Step 7

Stir in the cumin and paprika, and cook for another 1 minute to toast the spices.
