Ingredients

  • 1 cup green or brown lentils
  • 8 oz smoked sausage, sliced

  • 1 bay leaf
  • 2 fresh thyme sprigs

  • 0.5 tsp black pepper
  • 2 tbsp parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the lentils under cold water and set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the sliced smoked sausage to the pot and cook for 3-4 minutes, stirring occasionally, until browned. Remove the sausage and set aside.
