Ingredients

  • 1 cup Brown lentils
  • 6 cups Water

  • 1.5 cups Vermicelli or small spaghetti noodles, broken into 2-inch pieces
  • 3 Garlic cloves, minced
  • 1 teaspoon Ground coriander
  • 1 teaspoon Cumin
  • 0.5 teaspoon Ground black pepper
  • 14 oz Canned diced tomatoes (or 3 fresh tomatoes, diced)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the lentils under cold water and drain well.

Step 2

In a medium pot, combine the lentils and 4 cups of water. Bring to a boil, reduce the heat, and simmer for about 20 minutes, or until the lentils are tender but not mushy. Add 1 teaspoon of salt midway through cooking.

While the lentils cook, heat 2 tablespoons of oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt, and cook, stirring occasionally, for 15-20 minutes, or until the onions are fully caramelized and golden brown. Remove from the skillet and set aside.

Taste and adjust seasoning with additional salt, if needed.
