Ingredients

  • 1 cup green or brown lentils
  • 3 cups water or vegetable stock
  • 2 tablespoons olive oil

  • 1 medium celery stalk, diced

  • 2 tablespoons fresh lovage leaves, chopped
  • 1 whole bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Directions

Step 1

Rinse the lentils under cold water and set them aside.

Step 2

In a medium pot, heat the olive oil over medium heat.

Add the chopped onion, carrot, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables are softened and translucent.
