  • 0.5 teaspoon black pepper
  • 1 tablespoon white wine vinegar
  • 2 tablespoons fresh parsley

Directions

Step 1

Rinse the lentils under cold running water and pick through to remove any debris. Set aside.

Peel and finely chop the onion, carrot, and celery. Mince the garlic.

In a large pot, heat the olive oil over medium heat. Add the onion, carrot, and celery, and sauté for 5-7 minutes until softened.
