Ingredients

  • 1.5 cups Cooked lentils
  • 0.75 cups Walnuts
  • 0.5 cups Rolled oats
  • 1 medium Carrot, grated
  • 0.5 cups Red onion, finely chopped
  • 2 count Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Chili powder
  • 2 tablespoons Soy sauce or tamari
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cups Breadcrumbs (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly toast the walnuts on a baking sheet for 8-10 minutes until aromatic. Let cool.

Step 2

In a food processor, add the toasted walnuts and rolled oats. Pulse until they form a coarse meal.

Step 3

Add the cooked lentils, grated carrot, chopped onion, minced garlic, cumin, smoked paprika, chili powder, soy sauce, lemon juice, olive oil, salt, and pepper to the food processor.

Step 4

Pulse the mixture until it’s well combined but not completely smooth. The mixture should hold together when pressed but still have some texture.

Step 5

If the mixture is too wet, stir in breadcrumbs a little at a time until the desired consistency is reached.

Step 6

Shape the mixture into 4 evenly-sized patties, about 1/2 inch thick.

Step 7

Heat a lightly oiled skillet over medium heat. Cook the patties for 4-5 minutes per side or until golden brown and cooked through.

Step 8

Serve the lentil walnut burgers on hamburger buns or lettuce wraps, and garnish with your favorite toppings such as lettuce, tomato, pickles, or a creamy sauce.
