  • 2 cups fresh baby spinach
  • 2 tablespoons fresh parsley (optional, for garnish)
  • 1 tablespoon lemon juice (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Dice the onion, carrots, and celery. Add them to the pot and sauté for 5-7 minutes until the vegetables are softened.
