Ingredients

  • 1 cup dry brown or green lentils
  • 12 oz smoked kielbasa sausage

  • 1 15 oz can diced tomatoes, with juices
  • 6 cups vegetable or chicken broth
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the lentils thoroughly under cold running water and set aside.

Step 2

In a skillet over medium heat, add the olive oil and sliced kielbasa sausage. Cook for 4-5 minutes, stirring occasionally, until the sausage is lightly browned. Transfer the kielbasa to the slow cooker.

Step 3
