Ingredients

  • 1 cup Green or brown lentils (dry)
  • 3 cups Water
  • 1 teaspoon Salt
  • 1 cup Cherry tomatoes
  • 2 tablespoons Fresh parsley
  • 1 cup Goat cheese (crumbled)
  • 2 tablespoons Red onion (finely chopped)
  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the lentils thoroughly under cold water and drain.

Step 2

In a medium saucepan, combine the lentils with 3 cups of water and 1 teaspoon of salt. Bring to a boil over medium-high heat.

Reduce heat to low and simmer the lentils for 20-25 minutes, or until they are tender but not mushy. Drain and allow to cool to room temperature.
