Ingredients

  • 1 cup Dry brown or green lentils
  • 2.5 cups Water
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 2 tablespoons Tomato paste
  • 0.5 cup Vegetable stock or water
  • 8 pieces Small tortillas
  • 1 assorted Taco toppings (lettuce, diced tomatoes, shredded cheese, avocado, salsa, etc.)

Directions

Step 1

Rinse the lentils under running water and pick out any debris or stones.

Step 2

In a medium saucepan, combine the lentils and 2.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are soft but still hold their shape. Drain any excess water and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes, stirring occasionally, until softened.

Add the minced garlic and cook for another 1 minute until fragrant.

Step 5

Stir in the cumin, smoked paprika, chili powder, oregano, and salt. Cook for 30 seconds to toast the spices.

Add the cooked lentils to the skillet and stir to coat them in the spice mixture.

Stir in the tomato paste and 0.5 cup of vegetable stock or water. Cook for 5-7 minutes, stirring occasionally, until the mixture thickens slightly and is heated through.

Warm the tortillas in a dry skillet or microwave as per the package instructions.
