  • 1 cup dried green or brown lentils, rinsed
  • 4 cups vegetable broth
  • 1 14-ounce can diced tomatoes, canned
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 5 cups baby spinach, fresh
  • 0.25 cup fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Heat a large pot over medium heat and add olive oil.

Once the oil is hot, add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
