  • 12 ounces smoked sausage (e.g., andouille or kielbasa)

  • 1 cup dried lentils, rinsed and drained
  • 6 cups chicken broth
  • 1 can of diced tomatoes (14 ounces)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups spinach or kale, roughly chopped

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Slice the smoked sausage into rounds and add to the pot. Cook for 4-5 minutes, stirring occasionally, until browned. Remove the sausage with a slotted spoon and set aside.

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
