  • 2 teaspoons Herbes de Provence
  • 1 unit bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups baby spinach (optional)
  • 1 tablespoon lemon juice (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced yellow onion, carrots, and celery to the pot. Cook for 5–7 minutes, stirring occasionally, until the vegetables are softened.
