Ingredients

  • 1 cup green or brown lentils, rinsed and drained

  • 2 medium carrot, peeled and diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cups butternut squash, peeled and chopped into 1-inch cubes
  • 1 cup parsnips, peeled and chopped
  • 1 medium sweet potato, peeled and chopped into 1-inch cubes
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large mixing bowl, toss the butternut squash, parsnips, and sweet potato with 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1/2 teaspoon of salt, and a pinch of black pepper.

Spread the vegetables evenly on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes, flipping halfway through, until caramelized and tender.
