  • 2 diced Celery stalks
  • 2 medium, peeled and diced Potatoes
  • 1.5 liters Vegetable broth
  • 1 whole Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Smoked paprika
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon White vinegar
  • 2 tablespoons, chopped (optional for garnish) Fresh parsley

Directions

Step 1

Rinse the brown lentils under cold water and set them aside.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Add the diced onion and sauté for 3–4 minutes until softened and translucent.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the diced carrots, celery, and potatoes to the pot, stirring to combine. Cook for 5 minutes to slightly soften the vegetables.
