Ingredients

  • 1 cup Dry green or brown lentils, rinsed
  • 1 14-ounce can Canned diced tomatoes (with juices)
  • 4 cups Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 1 tablespoon Fresh lemon juice (optional)

Directions

Step 1

Set your pressure cooker to sauté mode and heat the olive oil.

Step 2

Add the diced onion and cook for 2 minutes until softened.

Step 3

Stir in the minced garlic, diced carrots, and diced celery. Sauté for another 2 minutes.

Step 4

Add the rinsed lentils, canned diced tomatoes (with juices), vegetable broth, cumin, paprika, thyme, salt, and black pepper. Stir well to combine.
