  • 14.5 ounces canned diced tomatoes (with juices)
  • 6 cups chicken broth
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach (optional)
  • 0 grated Parmesan cheese (optional, for serving)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sausage to the pot and cook, breaking it into small pieces, until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

In the same pot, add the diced onion, carrots, and celery. Cook over medium heat, stirring occasionally, until the vegetables are softened, about 5 minutes.
