Ingredients

  • 200 g Green or brown lentils
  • 300 g Sausage meat (pork or chicken)
  • 450 g Puff pastry sheets
  • 1 medium, finely diced Onion
  • 2 cloves, minced Garlic cloves
  • 50 g Breadcrumbs
  • 1 large, beaten Egg
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Ground paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Milk

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Rinse the lentils thoroughly and cook them in a medium saucepan of boiling water for about 15-20 minutes or until tender. Drain and set aside to cool.

Step 3

In a skillet over medium heat, sauté the diced onion and minced garlic until softened and translucent, about 3-4 minutes. Remove from heat and let it cool.

Step 4

In a large mixing bowl, combine the cooked lentils, sautéed onion and garlic, sausage meat, breadcrumbs, parsley, paprika, salt, and black pepper. Mix thoroughly until well combined.

Lightly flour a clean work surface and roll out the puff pastry sheets into a thin, even layer, if they aren't pre-rolled.

Divide the lentil and sausage mixture into three equal portions. Form each portion into a long log shape (roughly the same length as the puff pastry).

Cut the puff pastry sheets into strips wide enough to wrap around the logs. Place a log of filling onto each strip and roll the pastry around it, pressing the edge gently to seal.

Brush the seam with a little of the beaten egg to help it seal, then cut the rolls into smaller bite-sized portions (2-3 inches long). Arrange them seam-side down on the prepared baking sheet.

Brush the tops of the rollettes with the remaining beaten egg mixed with 1 tablespoon of milk to create a golden glaze.

Bake in the preheated oven for 20-25 minutes or until the pastry is puffed and golden brown.
