  • 14.5 ounces Canned diced tomatoes (with juice)
  • 1 cup Okra (sliced)
  • 2 leaves Bay leaves
  • 1 teaspoon Ground thyme
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 cups Cooked rice (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the sliced sausage and cook for 5-7 minutes, stirring occasionally, until browned. Remove the sausage and set it aside.

In the same pot, add the diced onion, bell pepper, and celery. Sauté for 5 minutes or until softened.
